A Sweet Summer Treat with Jenn from P&C

Jenn is my fruit and veggie girl! She always has the best recipes that are healthy for you! She inspires me to eat healthy and I'm honored to have her here sharing a sweet treat (yes, a sweet treat!) with all of you!

For those of you who know me already, you're already quite aware that i'm cah-razy and prefer fruit and veggies over sugar.  Luckily my husband (Paul) and father in law (Mike) are expert bakers and have devised a dessert that even I will lick clean from the plate eat!  Key Lime Pie!

Mike's (Easy!) Key Lime Pie
Not to be confused with Mike's Hard Lemonade =)



What's in it?
1 Ready Made 9-inch Graham Cracker Crust
21oz Sweetened Condensed Milk
2 Large Eggs
8oz 100% Key Lime Juice (the more juice you add, the tarter the pie)
Your favorite whipped topping 

Easy Peasy Whipped Cream
1 cup heavy whipping cream
3 tbsp powdered sugar
1 tbsp vanilla extract

Beat whipping cream with hand mixer until a stiff peak forms (basically you want it fluffy but with enough form to stick to the beater).  Next, mix in powdered sugar and vanilla extract.  Beat for an additional 20 seconds. Viola! 

Key Lime Controversy
Key lime pie is best with the juice of actual key limes. Try to find American key limes if you can since imported Mexican key limes are TINY and take forever to juice. 100% key lime juice like Mrs. Biddle's Key Lime Juice or Nellie & Joe's Key West Lime Juice will work fantastically .  If  you prefer a thicker filling, or notice that the filling is too watery, add 1 level teaspoon of corn starch to thicken. To date, my father-in-law has made us pies with all three variations and they all rock.  Paul has inherited this talent.  And I'm SUPER thankful for that =)

Get Baking!
Pre-heat oven to 350F.  Mix eggs and condensed milk with a hand mixer.  Next, beat with hand mixer on low while slowly adding lime juice.  If you notice the pie is super watery (especially if you add extra juice) you may add 1tsp of corn starch to thicken.  Bake at 350F for 15-20 minutes.  After allowing pie to cool, place in your fridge to chill for a minimum of 3 hours.  Once your pie is perfectly chilled, top with your favorite whipped cream and garnish with a lime slice. Enjoy the alternating YUM and ooh! sour! faces everyone will be made while eating this pie =)

So, how was it? Ah. Maze. Ing.  Its the one dessert I won't turn down =)

If you like this, you should try Key Lime Pie on a stick! It is basically frozen key lime pie covered in chocolate.
